Soup & Quinoa

Get yo grub on! Kick start 2013 with more home made meals. I don't care if it's healthy or not. Try not to eat fast food or out as much. That's one of my resolutions. 



Quinoa

-2 Tablespoons lemon juice
-4 Ears of corn shucked


-1/2 Stick melted butter
-1 Tbs honey
-1/2 Tsp salt
-1/4 Tsp black pepper
-2 Cups uncooked quinoa 
-4 Scallions chopped

Directions:
Boil corn, when cooled off cut the kernels off the cob
 For the dressing whisk together lemon juice, melted butter, honey, salt and pepper in bowl

Rise uncooked quinoa then cook in a pot of boiling salted water (2 cups of water per cup of quinoa)

Add quinoa, corn, chopped scallions in a bowl add dressing. Toss evenly and serve.

 Ingredients:
-2 large sweet potatoes 
-3 pinches of salt
-1/2 tsp Chipotle powder
-1 avocado diced
-1/2 cup no chicken broth
-1/2 cup soy milk or almond 

Directions:
-Preheat oven to 400 degrees & bake the potatoes until tender about 45 mins (I wrapped mine in foil) 
Remove the skin
Mash them and add them in the blender with the broth and non-dairy milk 
Add the spice and salt to taste
Garnish avocado on top and enjoy
